If you truly loved someone (as god is supposed to love us) can you envisage a situation where you would be content to see them suffer for eternity for a transgression as minor as not loving you back?

That would be a logical contradiction: to be content with that fate for someone would be by definition not loving them.

The Quran does not say the tree was a tree of knowledge, but the Bible does. The Bible also makes Adam's deed a sin, Quran says not. Why is acquiring knowledge a sin in your book, and why is it so bad all subsequent generations are supposedly damned?

Right. It doesn't make sense. It is abhorant, despicable.....evil even. It would be the complete absence of love. So if God is Love (Complete, Full, Essentially, Is Perfect Love, as Jesus followers believe) AND is loving, then perhaps your premise is false and needs to be rethought.
I suggest, humbly I may add, that you research the Atonement. You will discover its all about a rescue mission that ends with a comrad jumping on a grenade.
